Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup walnuts
  • 1/2 cup honey
  • 1/4 cup mayonnaise
  • 1 tablespoon sweetened condensed milk
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cornstarch
  • 1/4 cup vegetable oil (for frying)
  • 2 green onions, sliced (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. In a small saucepan, bring 1 cup of water to a boil. Add the walnuts and boil for 2 minutes. Drain and rinse the walnuts under cold water.
  2. In the same saucepan, add the drained walnuts and 1/2 cup of honey. Cook over medium heat for about 5 minutes, stirring frequently until the walnuts are golden brown and caramelized. Remove from heat and set aside.
  3. In a medium bowl, combine mayonnaise, sweetened condensed milk, lemon juice, salt, and black pepper. Mix well and set aside.
  4. In another bowl, toss the shrimp with cornstarch until evenly coated.
  5. In a large skillet, heat the vegetable oil over medium-high heat. Add the shrimp in batches and fry for about 2-3 minutes on each side until golden and cooked through. Remove the shrimp and place them on a paper towel-lined plate to drain excess oil.
  6. In a large bowl, combine the fried shrimp with the mayonnaise mixture and toss until the shrimp are well coated.
  7. Top the shrimp with the caramelized walnuts and garnish with sliced green onions.
  8. Serve the honey walnut shrimp over cooked white rice.

Notes

  • For a spicy kick, add a teaspoon of sriracha to the mayonnaise mixture.
