Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup vegetable oil (for frying)
  • 1 cup orange juice (freshly squeezed if possible)
  • 1/2 cup granulated sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a large bowl, combine flour, cornstarch, salt, pepper, garlic powder, onion powder, and paprika. In another bowl, beat the eggs. Dip each piece of chicken into the egg, then coat thoroughly in the flour mixture. Set aside on a plate.
  2. Heat the vegetable oil in a large skillet or deep fryer over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.
  3. In a saucepan over medium heat, combine orange juice, sugar, soy sauce, rice vinegar, and orange zest. Stir until the sugar dissolves. Bring to a simmer.
  4. Add the cornstarch mixture to the saucepan, stirring constantly until the sauce thickens, about 2-3 minutes. If desired, add red pepper flakes for some heat.
  5. Toss the fried chicken pieces in the orange sauce until well coated. Serve immediately.

Notes

  • For extra crunch, double fry the chicken by frying it once, letting it rest for a few minutes, and then frying it again.
  • For a healthier version, bake the chicken at 400°F for 20-25 minutes instead of frying, and use a lighter sauce made with less sugar.
