Instructions
- In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, and minced garlic until smooth and well combined.
- In a large bowl, add the sliced cucumbers. Pour the spicy peanut sauce over the cucumbers and toss gently to coat all the slices evenly.
- Let the cucumbers marinate in the sauce for at least 15 minutes at room temperature or refrigerate for up to 1 hour for a more intense flavor.
- Before serving, give the cucumbers another gentle toss. Transfer to a serving dish and garnish with chopped cilantro and peanuts.
Notes
- For a crunchier texture, add sliced bell peppers or carrots to the cucumber mixture.
