A creamy and comforting Crockpot Chicken Gnocchi Soup that is easy to prepare and perfect for any occasion.

- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1 package (16 ounces) gnocchi
- 2 cups fresh spinach
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in the bottom of the crockpot. Add the chicken broth, carrots, celery, onion, garlic, thyme, oregano, salt, and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the heavy cream and gnocchi. Cover and cook on high for an additional 30 minutes, or until the gnocchi is cooked and tender.
- Add the fresh spinach and stir until wilted. Serve hot, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Add other vegetables like peas or corn for extra flavor and nutrition.
