Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) tomato sauce
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese (for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add the ground beef to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  4. Stir in black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth.
  5. Add chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a boil, then reduce heat to low and let simmer for 20-30 minutes, stirring occasionally.
  6. Taste and adjust seasonings if needed. Serve hot, topped with shredded cheddar cheese and garnished with fresh cilantro.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce during cooking.
  • To make it vegetarian, substitute ground beef with 1 cup of lentils and use vegetable broth instead of beef broth.
