- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (14.5 ounces) diced tomatoes with green chilies
- 1 can (15 ounces) tomato sauce
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese (for topping)
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add the ground beef to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
- Stir in black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth.
- Add chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a boil, then reduce heat to low and let simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasonings if needed. Serve hot, topped with shredded cheddar cheese and garnished with fresh cilantro.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce during cooking.
- To make it vegetarian, substitute ground beef with 1 cup of lentils and use vegetable broth instead of beef broth.
