Description
Coctel de Camarones is a refreshing Mexican shrimp cocktail that combines shrimp with a zesty sauce and fresh vegetables.

- 1 pound large shrimp, peeled and deveined
- 1 cup ketchup
- 1/2 cup fresh lime juice (about 4 limes)
- 1/2 cup diced avocado
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, seeded and finely chopped (optional)
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions
- In a large pot, bring water to a boil and add the shrimp. Cook for 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large mixing bowl, combine the ketchup and lime juice. Stir until well mixed.
- Add the cooked shrimp, avocado, cucumber, red onion, cilantro, and jalapeño (if using) to the bowl. Gently fold the ingredients together until everything is evenly coated with the sauce.
- Season with salt and pepper to taste. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips on the side.
Notes
- For a spicier kick, add more jalapeño or a dash of hot sauce to the mixture.
- Substitute the shrimp with cooked crab meat or diced fish for a different seafood twist.
