- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 cup long-grain white rice
- 2 cups chicken broth (for rice)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
Instructions
- Start by seasoning the chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Pour in 1/2 cup of chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream, cherry tomatoes, and lemon juice. Bring the mixture to a simmer.
- Return the chicken to the skillet, spooning the sauce over it. Let it simmer for an additional 5 minutes to heat through and allow the flavors to meld. Stir in chopped parsley before serving.
- While the chicken is simmering, prepare the garlic Parmesan rice. In a medium saucepan, bring 2 cups of chicken broth to a boil. Add the rice and reduce heat to low. Cover and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, stir in butter and grated Parmesan cheese until well combined.
- Serve the chicken scampi over a bed of garlic Parmesan rice, drizzling extra sauce from the skillet on top.
Notes
- For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
- Add some fresh spinach or kale to the sauce for extra nutrients and color. Just stir it in during the last few minutes of cooking until wilted.
