A delicious and refreshing Chicken and Corn Pasta Salad with Bacon, perfect for any gathering.

- 2 cups rotini pasta
- 1 cup cooked chicken, shredded
- 1 cup sweet corn (fresh, frozen, or canned)
- 6 slices bacon, cooked and crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, shredded chicken, corn, crumbled bacon, cherry tomatoes, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a good stir and garnish with chopped parsley.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced bell peppers or cucumbers for extra crunch and color.
