Ingredients

  • 1 bell pepper, diced (any color)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 cup cooked and crumbled bacon (optional)
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, bell pepper, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Stir in the cubed potatoes, chicken broth, Cajun seasoning, salt, black pepper, and cayenne pepper (if using). Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, or until the potatoes are tender.
  3. Once the potatoes are cooked, use a potato masher or immersion blender to mash some of the potatoes for a creamier texture, leaving some chunks for heartiness.
  4. Stir in the heavy cream and let the soup heat through for an additional 5 minutes.
  5. If using, stir in the crumbled bacon just before serving.
  6. Serve hot, garnished with sliced green onions and chopped parsley.

Notes

  • For a vegetarian version, substitute the chicken broth with vegetable broth and omit the bacon.
