- 1 cup fresh peaches, diced
- 1/4 cup bourbon
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the diced peaches, bourbon, honey, soy sauce, olive oil, Dijon mustard, garlic powder, salt, and black pepper. Mix well to create the marinade.
- Place the salmon fillets on the prepared baking sheet and pour the peach marinade over them, ensuring they are well coated.
- Roast in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
