- 2 cups cooked chicken breast, shredded
- 1 ripe avocado, mashed
- 1/4 cup plain Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced cucumber
- 1/4 cup chopped fresh cilantro
Instructions
- In a large mixing bowl, combine the shredded chicken and mashed avocado.
- Add the Greek yogurt, lime juice, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Fold in the diced red bell pepper, cucumber, and chopped cilantro.
- Taste and adjust seasoning if necessary.
- Serve immediately on a bed of greens, in a sandwich, or in lettuce wraps.
Notes
- For added crunch, mix in some chopped nuts or seeds, such as walnuts or sunflower seeds.
- Substitute the chicken with canned tuna or chickpeas for a different protein source.
